Abstract
This study was conducted on March to April 2011 in Post-Harvest Technology Laboratory of the State Islamic University of Sultan Sharif Kasim Riau and Food Chemistry Laboratory University of Riau. The purpose of this study was to determine the effect of palm sugar concentration and storage time on the quality of pH, levels of sucrose, vitamin C content of pineapple juice queen varieties. The method used in this study is the Experimental Method of Factorial Split Plot Design with 16 combinations of treatments and duplicate. Factor I concentration of palm sugar (G) with the treatment G1: 0 grams palm sugar + 450 grams of white sugar, treatment G2: 150 + grams of sugar palm 300 grams of white sugar, treatment G3: 300 grams palm sugar + 150 grams of white sugar and treatment G4 : 450 grams palm sugar and 0 grams of white sugar. Factor II storage time (P) with P0 treatment: 0 days of storage, P1: 3 days of storage, P2: 6 days of storage and P3: 9 days of storage. The parameters analyzed are the determination of pH, vitamin C levels and levels of sucrose. There is the influence of each treatment were tested with Duncan's Multiple Range Test (DMRT). The Results showed that the concentration of palm sugar gives a different effect is very real impact on vitamin C level and sucrose levels but did not give a effect on the determination of pH. Storage time showed a significantly different effect on levels of vitamin C, sucrose content and pH determination. The combination treatment between palm sugar concentration and storage time showed a different effect is very real impact on levels of pH, on level of vitamin C and sucrose levels. The concentration of palm sugar 150 grams: 300 grams of white sugar and 0 days of storage provide the best quality varieties on pineapple juice queen varieties.
