Abstract
The period between the prevalence of eggs harvested until consumed varies, it is necessary to damage prevention, one of them is the smearing oil to close the pores of the egg shell, so that the egg contents are not contaminated by spoilage microorganisms. This study was conducted to determine the effect of the application of coconut oil and palm oil on egg weight loose, foaming, pH, and Haugh Unit during storage at room temperature. This research has been carried out in the Postharvest Laboratory Faculty of Agriculture and Animal Science State Islamic University Sultan Syarif Kasim Riau 17 March 2013 up to 17 April 2013. Study used 81 chicken eggs were obtained from Lohmann. The 0 day old eggs weighing 50-60 grams. Other materials were 200 ml coconut oil and palm oil 200 ml. Eggs by 27 items smeared with coconut oil, 27 items smeared with palm oil and 27 items without any treatment, then stored with storage time 0, 15 and 30 days. This study was conducted with a completely randomized design (CRD) with factorial pattern consisting of 2 factors. Parameters observed were a decrease in egg weight loose, foaming, pH and Haugh unit. The results of this study indicated that the application of coconut oil and palm oil on the eggs was can slow the decline in egg weight loose, improve egg froth , and maintaining the Haugh unit values. While the storage duration more dominant influence on the pH value compared with smearing oil. Coconut oil and palm oil can be used to maintain the quality of eggs.
