Abstract

The purpose of the study was for knowing the physical quality of chicken egg sold by egg trader in Simpang Baru market, Pekanbaru looked from SNI 01- 3926-2006. The method was survey. The samples were 200 eggs that taken from 2 egg traders. The variables were 1) the egg size include weight, length and diameter, 2) the egg shell include integrity, shape, colour, slippage and clearness, 3) the air cell include the depth and the freedom of movement, 4) the albumin, include the clearness and the viscosity, 5) the yolk, include the position, the appearance of yolk line and the clearness, 6) the albumin index, 7) the yolk index, and 8) the Haugh Unit. The data was analyzed by mean, deviation standard, t test and percentage. The result showed that the physical quality of chicken egg sold at Simpang Baru Market, Pekanbaru, include weight, diameter, air cell depth, albumin index and yolk index are according to SNI 01-3926-2006. Egg length sold in Simpang Baru market, Pekanbaru longer than egg length in SNI 01-3926- 2006. Haugh Unit egg sold in Simpang Baru market, Pekanbaru lower than Haugh Unit egg chicken according to SNI 01-3926-2006. The physical quality of egg shell, air cell, albumin and yolk of egg chicken sold in Simpang Baru market, Pekanbaru mostly stay at first quality according to SNI 01-3926-2006
