Abstract

This research aimed to study the procedure with the requirements of slaughter cattle slaughter equipment in accordance with the recommendation, and sup­ ported by the hygiene of workers who perform on cow slaughter. This study was conducted in December 2010 to January 2011, located at Abattoirs (RPH) Pekanbaru City. The subjects were completeness and sanitation facilities cut­ ting, road cutting procedures and hygienic slaughterhouse workers Pekanbaru City. The tools used in this research is a checklist and a questionnaire sheet which refers to the Indonesian National Standard (SNI) 01-6159-1999 about Abattoirs and the Decree of the Minister of Agriculture No. 413/kpts/TN.310/7/1992 about cut Abattoirs and Meat Handling and associated results. Completeness and sani­ tation facilities and procedures for cutting the cutting is done by observation and the results were written on sheets that had been prepared checklist. Collect­ ing data on the hygienic workers conducted by distributing questionnaires to research subjects. The data has been collected was analyzed descriptively to de­ scribe the characteristics of variables in this study. The results of this study indi­ cate that Abattoirs (RPH) Pekanbaru City as a whole has a completeness and facilities but some of these facilities can not function properly and correctly. Personal hygiene which is owned by RPH Pekanbaru good enough, this can be seen with most of the workers have to apply even if RPH Pekanbaru City does not provide training to employees regarding personal hygiene. Overall, the evalu­ ation of slaughterhouses in the RPH Pekanbaru is in conformity with the stan­ dards despite the support facilities and personal hygiene is still lacking.
