Abstract

The objectives of the research were to observe the condition of the chicken meat (broiler) at the traditional market (Pasar Inpres) Bangkinang, based on the contamination of bacteria (Total Plate Counts) and also to collect the informations about the knowledge of the retailer on the handling and sanitation due to contamination of microorganisms. Based on the Indonesian standard for TPC for the broiler (SNI 01-6366- 2000), the broiler that sold at the traditional market (Pasar Inpres) Bangkinang were higher than allowed. The Total Plate Counter (TPC) of the broiler that sell on the market were 4.36 x 105 CFU/gr, were higher than that of allowed 1 x 105 CFU/gr (SNI 01-6366-2000). The average pH of the broiler were 5.88 (Sd. 0.14). The knowledge of the retailer for the handling and sanitation of the broiler to minimalized the contamination of the pathogens were still very low, and the extention from the government agents were urgently needed.
